I always get excited this time of year when St. Patrick’s Day comes around. Traditionally my mom invites me over for a cornbeef and cabbage dinner in celebration of my Irish heritage. My idea of celebrating St. Patrick’s over the years has been flipped on its head. For starters I am a vegetarian so having a “cabbage” dinner is not appealing to me. Gas much?
